Spice Cake
Spice Cake
(gluten & dairy free)
(preheat oven to 350)

2 cups Gluten-Free 1 to 1 baking flour (Bob's Red Mill)
1 1/2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 drop young living vitality nutmeg
1 drop young living vitality cloves
1 drop young living vitality ginger
1 cup almond milk with splash of apple cider vinegar
1/4 cup coconut oil
1/4 cup earth balance non-dairy "butter"
1/2 teaspoon vanilla
3 eggs

In a mixing bowl: 
Combine the dry ingredientsgluten-free flour, sugar, baking powder & baking soda, cinnamon (if using dry spice: nutmeg, cloves & ginger now)
Add almond milk/vinegar, vitality oils, coconut oil, "butter
Whisk or beat with an electric mixer on low speed until well combined, then increase to high speed and beat for two more minutes. 
Add vanilla & eggs and beat for 2 additional minutes.
Grease 13x9x2 inch baking pan.
Pour batter into pan & bake at 350 for 30-35 minutes
Cake is done when a toothpick inserted near the center comes out clean.
Cool before frosting
Frost with a cream cheese style frosting, if desired.
Serves 12


*if using ground spices instead of essential oils:
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
